Why hole in donut

He was just 16 years old at the time. Although the outsides and the edges were crisp, the centres of the donuts were always greasy and doughy. Gregory suggested punching a hole in the middle of the fried cakes, so that the insides of the cakes would cook as evenly as the outsides. Experts believe that this reason makes sense, because of the way that doughnuts are cooked.

But the rest of them have holes and there is a reason behind it. The theory behind the Doughnut hole is credited to Captain Hanson Gregory who was a sailor in America. Initially doughnuts were whole pieces of fried dough referred as fried cake. Once the cakes were fried, they used to turn up fine at the edges but the dough always remained raw at the center which gave Captain Gregory an idea. He decided to scoop out the dough from the center. This enables even cooking of the entire doughnut.
