I let the batter sit for 20 minutes or so before using it on the griddle so that the seeds would lose a bit of their crunchiness. My Vietnamese Ma has no molars. The unused batter kept well and I added a bit more water the next day to reprise the whole breakfast. It was a hit. I also added bananas and spread on a little jam.

I salvaged the batch by sifting out the buckwheat and replacing with buckwheat groats. Much better, and oh, so yummy! And yay again! I bought my own chia, buckwheat, and hemp seeds to make my own. I enjoy mine stirred into yogurt. I love Holy Crap but have never bought it because of the price. I have made it many times using a similar recipe but I toast the buckwheat at F for 30 min. Sometimes I will add dried coconut, raw sunflower seeds or nuts. Such great ideas for add-ins, and for toasting the buckwheat to change up the flavor. A little variety is always nice.
